Packaging
The Packaging Room employees are assembling
wooden boxes. Then they place plastic liners in each box. The cheese is emptied
into these boxes. The product is referred to as 640 pound blocks.
The cheese is moved from the drain tables and blown into the packaging room
where it is placed in the 640 containers.
Once the cheese has been placed in the 640
pound blocks, any remaining whey is pressed out using pressure and vacuum. Then
it is weighed and subsequently stored for aging.
